Blue Springs Cafe at 3505 George Street, Highland, Illinois.

This is a place you go if you love mid-west comfort food. This is how I would have cooked if I felt like cooking.
The fried chicken is excellent, as was everything else we tried (and we went on a Saturday night and got the buffet; we tried a LOT!)
Pies are great, and whoever it was that was complaining about $18 for a WHOLE PIE needs to have their head examined.
All in all, we loved it and will be back.
Note: They do not accept cards, but do have an ATM near the counter.
